Oat Spiders
Ingredients:
- 1 1/2 cups gluten-free rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup erythritol
- 1 tsp vanilla extract
- Pinch of salt
- Pumpkin seeds (for eyes)
- Crispbread pieces (for legs)

Instructions:
Prepare the oat mixture:
- In a bowl, mix together the gluten-free oats, pumpkin puree, erythritol, vanilla extract, and a pinch of salt. Stir until the mixture is well combined and sticky.
Form the spider bodies:
- Scoop out about 1-2 tablespoons of the mixture and roll them into small balls. Place them on a baking sheet lined with parchment paper.
Chill:
- Refrigerate the oat balls for 20-30 minutes to firm up.
Add the legs:
- Break the crispbread into small pieces to form the spider legs. Stick 3-4 crispbread legs on each side of the oat balls.
Add the eyes:
- Use pumpkin seeds to create eyes on the front of each spider by gently pressing them into the oat balls.
Chill again:
- Return the spiders to the fridge for another 10 minutes to set.
Serve:
- Your cute oat spiders are ready to serve! Keep them in the fridge until it's time to share.
