Oat Spiders - Halloween Cookies 🕷️

Oat Spiders 




Ingredients:

  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup pumpkin puree 
  • 1/4 cup erythritol 
  • 1 tsp vanilla extract
  • Pinch of salt
  • Pumpkin seeds (for eyes)
  • Crispbread pieces (for legs)

Instructions:

  1. Prepare the oat mixture:

    • In a bowl, mix together the gluten-free oats, pumpkin puree, erythritol, vanilla extract, and a pinch of salt. Stir until the mixture is well combined and sticky.
  2. Form the spider bodies:

    • Scoop out about 1-2 tablespoons of the mixture and roll them into small balls. Place them on a baking sheet lined with parchment paper.
  3. Chill:

    • Refrigerate the oat balls for 20-30 minutes to firm up.
  4. Add the legs:

    • Break the crispbread into small pieces to form the spider legs. Stick 3-4 crispbread legs on each side of the oat balls.
  5. Add the eyes:

    • Use pumpkin seeds to create eyes on the front of each spider by gently pressing them into the oat balls.
  6. Chill again:

    • Return the spiders to the fridge for another 10 minutes to set.
  7. Serve:

    • Your cute oat spiders are ready to serve! Keep them in the fridge until it's time to share.
