Gluten-Free Vegan Kutia Recipe
Ingredients:
- 1 cup millet or oat groats (gluten-free grains)
- 3 cups water
- 1 cup poppy seeds
- 1/2 cup chopped walnuts
- 1/2 cup chopped almonds
- 1/2 cup raisins
- 1/2 cup chopped dried apricots
- 1/2 cup maple syrup or agave nectar (as a honey substitute)
- 1 teaspoon lemon juice
- 1/2 teaspoon cinnamon
Instructions:
Prepare the Grains: Rinse the millet or oat groats thoroughly. In a pot, bring 3 cups of water to a boil, add the grains, reduce heat, and simmer until tender (about 20-25 minutes). Drain any excess water and let it cool.
Prepare the Poppy Seeds: Soak the poppy seeds in hot water for 30 minutes. Drain and grind them using a food processor or coffee grinder until they form a paste.
Combine Ingredients: In a large bowl, mix the cooked grains, poppy seed paste, chopped nuts, raisins, and dried apricots.
Sweeten and Flavor: Combine the maple syrup or agave nectar with lemon juice and cinnamon in a separate bowl. Pour this mixture over the grain and fruit mixture, stirring well to ensure everything is evenly coated.
Chill and Serve: Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld. Serve chilled, garnished with additional nuts or dried fruits if desired.
