Pizza Day Meets Valentine’s: A Heartwarming, Gluten-Free Vegan Treat

Pizza Day is the perfect excuse to indulge in a delicious, homemade pizza. This day, celebrated annually, honors one of the most popular and versatile dishes in the world. Originating in Italy, pizza has evolved over centuries, adapting to different cultures and dietary preferences. To celebrate, I’m sharing a gluten-free, plant-based pizza recipe with a wholesome, nutritious crust made from buckwheat and rice flour. This crust is crispy on the outside, soft on the inside, and pairs beautifully with your choice of toppings.


Heart-Shaped Gluten-Free Vegan Pizza 



Ingredients:

For the crust:

  • 1 cup buckwheat flour

  • 1 cup rice flour

  • 1 tbsp psyllium husk

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup warm water

  • 1 tbsp apple cider vinegar

For the sauce:

  • 1/2 cup canned tomatoes, blended

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • Salt to taste

Topping suggestions:

  • Olives, sliced

  • Spinach or arugula

  • Vegan cheese of choice

  • Chopped nuts for crunch

  • Jalapeños for a spicy kick



Instructions:

  1. Preheat the oven to 200°C (392°F) and line a baking sheet with parchment paper.

  2. Combine buckwheat flour, rice flour, psyllium husk, baking powder, and salt in a mixing bowl.

  3. Add warm water and apple cider vinegar, mixing well until a dough forms.

  4. Let the dough rest for 10 minutes, then roll it into a heart shape.

  5. Transfer the rolled dough onto the prepared baking sheet and bake for 8-10 minutes.

  6. Spread the blended tomato sauce over the pre-baked crust and layer your chosen toppings.

  7. Return the pizza to the oven and bake for another 12-15 minutes until crispy and golden.

  8. Remove from the oven, let it cool slightly, and enjoy!
