  • 1/2 cup shredded vegan cheese

  • 1/4 cup finely chopped walnuts

  • 1/4 cup finely chopped onion

  • 2 cloves garlic, minced

  • 1 tablespoon tamari or coconut aminos

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon salt

For the Garnish:

  • Extra shredded vegan cheese

Instructions:

  1. Preheat Oven: Set your oven to 180°C (350°F). Line a baking tray with parchment paper.

  2. Prepare the Mushroom Caps: Clean the mushrooms and remove the stems. Set the caps aside and finely chop the stems.

  3. Make the Filling: In a pan over medium heat, sauté the chopped mushroom stems, onion, and garlic until softened. Add the vegan ground meat, walnuts, tamari, smoked paprika, thyme, salt, and black pepper. Cook for another 5 minutes, stirring frequently.

  4. Stuff the Mushrooms: Fill each mushroom cap generously with the mixture and top with shredded vegan cheese.

  5. Bake: Arrange the stuffed mushrooms on the prepared baking tray and bake for 20-25 minutes until the mushrooms are tender and the cheese is melted.
