Mini Langos: Wholesome Twist on a Hungarian Classic

 Langos, the beloved Hungarian street food, is traditionally deep-fried and topped with sour cream and cheese. But what if you could enjoy the same satisfying flavors in a healthier, oven-baked version? These mini langos are gluten-free, vegan, and oil-free, made with a nutritious blend of shredded zucchini, potato, and hummus. Topped with melty vegan cheese, smoky vegan sausage, and crunchy hazelnuts, they’re the perfect bite-sized treat!


Mini Langos

Ingredients:

For the dough:

  • 1 1/2 cups (180g) gluten-free oat flour

  • 1/2 cup (60g) rice flour

  • 1/4 cup (30g) potato starch

  • 1 tsp xanthan gum

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 cup (120ml) warm plant milk (almond or rice for low-FODMAP)

  • 1/2 cup (120g) shredded zucchini, squeezed to remove excess moisture

  • 1 small potato, shredded and squeezed

  • 2 tbsp hummus

  • 1/2 tsp apple cider vinegar

  • 2 tbsp erythritol (optional, if a hint of sweetness is preferred)

For the topping:

  • 1/4 cup (60g) hummus

  • 1/4 cup (30g) shredded vegan cheese

  • 2 tbsp diced vegan sausage

  • 1 tbsp crushed hazelnuts

  • Lamb’s lettuce for serving


Instructions:

  1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.

  2. Prepare the dough by combining oat flour, rice flour, potato starch, xanthan gum, baking powder, and baking soda in a bowl.

  3. In a separate bowl, mix warm plant milk, shredded zucchini, shredded potato, hummus, and apple cider vinegar.

  4. Gradually combine the wet and dry ingredients, stirring until a soft dough forms. Let rest for 5 minutes.

  5. Scoop small portions of dough onto the baking tray, shaping them into rounds about 1 cm thick.

  6. Bake for 20-25 minutes, until golden brown and slightly firm. Let cool slightly.


  7. Add toppings by spreading hummus on each mini langos, then sprinkling with vegan cheese, diced vegan sausage, and crushed hazelnuts.

  8. Serve fresh with lamb’s lettuce on the side and enjoy!
