Spinach Doughnuts



Ingredients (makes about 6 small doughnuts or 12 bite-sized ones):

  • 40g fresh spinach (or 30g thawed frozen spinach, well-drained)

  • 120g oat flour

  • 10g rice flour

  • 2 tbsp erythritol

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp cinnamon (optional)

  • 1/2 tsp vanilla extract

  • 120ml almond milk

  • 1 tsp apple cider vinegar

  • 1 tbsp aquafaba

Instructions:

  1. Preheat oven to 180°C (356°F) and prepare a silicone doughnut mold.

  2. Blend spinach with almond milk and vinegar until smooth.

  3. Mix dry ingredients in a bowl.

  4. Combine wet and dry ingredients, and stir until smooth.

  5. Fill molds about ¾ full.

  6. Bake for 15-18 minutes.

  7. Let it cool, then add your toppings of choice!
