Tofu Skewers – Fresh, Flavorful & Fun!
There’s something so satisfying about tofu skewers—they’re light yet filling, incredibly versatile, and full of vibrant flavors. Whether grilled, baked, or cooked in a pan, they bring together crispy tofu, juicy veggies, and aromatic spices in one perfect bite.
I served mine on a plate with fresh lettuce and crispbread, adding a refreshing crunch to every bite. But that’s just one way to enjoy them! These skewers pair beautifully with fluffy quinoa, a creamy dip like hummus, or even a warm tortilla wrap. You can also mix and match your veggies depending on what you have on hand—anything works!
Tofu Skewers
Ingredients (makes about 4 skewers):

200g firm tofu, cubed

6 cherry tomatoes

1 zucchini, sliced

6 mushrooms

4 radishes, halved

1/2 cucumber, sliced

6 olives
Marinade Options (pick your favorite!)
🍋 Lemon-Herb:

1 tbsp lemon juice

1 tsp olive brine (from the olive jar)

1/2 tsp oregano

1/2 tsp basil

Salt and pepper

1 tbsp tamari or soy sauce

1/2 tsp smoked paprika

1/2 tsp garlic powder

Instructions:

Press the tofu for 10-15 minutes to remove excess moisture.

Prepare the marinade and coat the tofu cubes. Let sit for at least 20 minutes.

Assemble the skewers, alternating tofu with vegetables.

Grill: Cook for ~10 minutes, turning occasionally.

Oven: Bake at 200°C (400°F) for ~15 minutes.
