Sunshine Zucchini Bread: Cherry-Touched and Naturally Sweet

Sunshine Zucchini Bread 

(with Cherry Coconut Yogurt Glaze)



Ingredients (makes 1 small loaf):

  • 1 medium zucchini, finely shredded (~150g), water squeezed out

  • 30g coconut flour

  • 30g millet flakes

  • 50g erythritol (or to taste)

  • 1 tbsp ground flaxseed + 2.5 tbsp water (flax egg)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tbsp lemon juice

  • ½ tsp vanilla extract

  • ½ tsp cinnamon (optional)

  • A pinch of salt

  • ~100ml plant-based milk (adjust as needed)

Glaze:

  • 2–3 tbsp coconut yogurt (cherry flavor preferred)

  • 1 tbsp lemon zest, finely shredded

Instructions:

  1. Preheat the oven to 175°C (350°F). Line a small loaf pan with parchment paper.

  2. Prepare the flax egg by mixing flaxseed with water. Let sit for 10 minutes to gel.

  3. In a bowl, combine the coconut flour, millet flakes, erythritol, baking powder, baking soda, cinnamon, and salt.

  4. In another bowl, mix shredded zucchini, flax egg, lemon juice, vanilla extract, and plant milk.

  5. Combine the wet and dry ingredients. The batter should be thick but spreadable — add a splash more milk if too dry.

  6. Pour into the loaf pan and smooth the top.

  7. Bake for 30–40 minutes, until golden on top and a toothpick inserted comes out clean.

  8. Let cool completely before slicing. (It firms up beautifully once cooled!)

  9. Once cooled, spread a thin layer of cherry coconut yogurt over the top and decorate with extra lemon zest spirals
