Zero-Waste Mini Pizzas



Ingredients:

Base:

  • 10 slices of bread (any type – I used Schär Pan Multigrano gluten-free)

Spread (choose one or combine):

  • Tomato paste (1–2 tsp per slice)

  • Garlic-infused olive oil

  • Vegan pesto

Toppings (choose your favorites):

  • Vegan cheese, grated or sliced

  • Sliced mushrooms

  • Kale

  • Jalapeño slices

  • Cherry tomatoes, halved

  • Black or green olives, sliced

  • Chopped spinach or arugula

  • Zucchini, finely diced or grated

  • Vegan meat substitute or crumbled tofu/lentils

  • Fresh or dried herbs (basil, oregano, thyme, parsley)

  • Chili flakes or lemon zest (optional for extra brightness)

Instructions:

  1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

  2. Lay out all 10 slices of bread on the tray.

  3. Spread a thin layer of your base (tomato paste, pesto, or oil) on each slice.

  4. Add your toppings of choice — pile them up or keep them minimalist.

  5. Sprinkle with herbs, salt, pepper, or a pinch of chili flakes.

  6. Bake for 10–12 minutes, until the bread is crisp and the toppings are hot and lightly golden.


  7. Serve warm, optionally garnished with fresh parsley or a drizzle of infused olive oil.
