Mushroom Burgers

 Some meals invite improvisation. They aren’t rigid with rules or measurements, but instead, offer a frame to build upon, and that’s exactly what this mushroom burger does! It’s a concept rather than a formula, and that’s where the beauty lies 😉

Swapping traditional bread for roasted mushroom caps creates something that feels both grounded and fresh. The mushrooms offer depth and juiciness, while the fillings bring in richness, contrast, and color. It’s one of those dishes that looks impressive but comes together with minimal effort, and leaves room for creativity.

This kind of burger is perfect when you're after something satisfying but a little lighter, something that feels both casual and thoughtful. Ideal for warm afternoons, slow weekends, or spontaneous kitchen experiments.


The Mushroom Burgers


Ingredients:

  • Portobello or cremini mushrooms 

  • Vegan cheese (sliced or shredded)

  • Vegan salami or your favorite plant-based cold cuts

  • A few fresh greens (arugula, spinach, lamb’s lettuce, etc.)

  • Seeds (sunflower, pumpkin, or hemp)

  • Paprika or nutritional yeast (optional)

  • Salt and pepper to taste

  • Olive oil or spray (optional, for baking)

Instructions:

  1. Preheat your oven to 190°C (375°F).

  2. Clean the mushrooms and gently remove the stems. You can also scrape out the gills for more space.

  3. Place one mushroom cap gill-side up. Fill it with vegan cheese, a slice of vegan salami, and a few fresh greens.

  4. Top with a second mushroom cap, gill-side down, to create a “burger.”

  5. Sprinkle the tops with seeds, a little salt, pepper, and optional paprika or nutritional yeast.

  6. Place them on a lined baking sheet and bake for about 15–20 minutes, until the mushrooms are soft and the filling is melted.

  7. Serve warm, accompanied by a tomato-based dip, ketchup, mustard, or fresh greens on the side.


Serving Ideas:

You can keep it rustic: a few burgers on a plate with ketchup or sauce. Or try a more playful setup with a dipping bowl of tomato soup, some greens for freshness, and neatly arranged sliders dusted with seeds. Both look great. Both taste great.
