Energy Balls

Ingredients

  • 1½ cup of pumpkin puree

  • 2 cups oats (rolled or quick)

  • ½ cup erythritol (or adjust to taste)

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • Pinch of salt

  • 2 tablespoons chia seeds or flaxseeds

Coatings (choose any combination)

  • Spirulina powder

  • Beetroot powder

  • Shredded coconut (plain or lightly toasted)

  • Goji berries (finely chopped)

  • Flaxseeds

  • Chia seeds

  • Sunflower seeds

  • Cacao nibs or dark chocolate sprinkles

Instructions

  1. In a large bowl, combine pumpkin puree, nut butter, maple syrup, and vanilla extract. Mix well until smooth.

  2. Add oats, cinnamon, nutmeg, salt, and optional chia or flaxseeds. Stir until everything is evenly incorporated.

  3. Using your hands or a small cookie scoop, form the mixture into bite-sized balls.

  4. Place the balls on a parchment-lined tray or plate and refrigerate for at least 30 minutes to firm up.

  5. Once chilled, transfer the mixture to an airtight container and store it in the refrigerator.


Storage
