Italian Herb Tomato Bread (Gluten-Free, Oil-Free)

 This rustic tomato loaf is full of rich, savory flavor. The juicy tomatoes are blended with herbs, oat flour, and just a few wholesome ingredients. It bakes up soft and tender, perfect for slicing and toasting.

There’s no yeast, no gluten, no oil, and no fancy equipment needed. Just a blender and a loaf pan.

Italian Herb Tomato Bread 


Serves: 8–10 slices
Prep time: 10 minutes
Bake time: 50–55 minutes


Ingredients

2 cups oat flour
1 large ripe tomato (about 200–250 g), chopped
2 tbsp tomato paste
2 tbsp ground flaxseed
1 tsp baking soda
1 tbsp lemon juice or apple cider vinegar
1 tsp dried oregano
½ tsp dried basil
½ tsp salt
Optional: pinch of chili flakes or cracked pepper


Instructions

1. Preheat and prepare
Preheat oven to 180°C (350°F). Line a loaf pan (standard size) with parchment paper.

2. Blend the wet mixture
Add chopped tomato, tomato paste, flaxseed, lemon juice, and herbs to a blender. Blend until smooth.

3. Mix the batter
In a mixing bowl, stir together oat flour and baking soda. Pour in the blended tomato mixture and mix until you get a thick, spoonable batter. If it’s too dry, add a tablespoon or two of water or unsweetened plant milk. Transfer the batter to the lined loaf pan and smooth the top.

4. Bake
Bake for 50–55 minutes, or until the top is firm, slightly cracked, and a toothpick comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool fully.


Storage & Serving

  • Store in an airtight container in the fridge for up to 4 days.
  • Best enjoyed toasted with avocado, hummus, or simply sprinkled with sea salt. Also lovely alongside soups or chopped into cubes for salad croutons.
  • Serve warm with a cup of herbal tea or a light veggie broth for a cozy, simple meal.
