Vegan & Gluten-Free Cherry Oat Slice

 A wholesome, fruity treat that’s naturally sweetened with erythritol and packed with oats - this Cherry Oat Slice is soft in the middle, slightly crisp on the edges, and delicately spiced with cinnamon for that cozy flavor!

 It’s the kind of snack that feels indulgent but is actually nourishing and light :)

Ingredients

  • 1 ½ cups bran oats

  • ½ cup buckwheat flour

  • 2 tbsp ground flax + 5 tbsp water (flax “egg”)

  • ½ cup unsweetened applesauce

  • ½ cup erythritol

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon (or more, to taste)

  • ½ tsp baking powder

  • Pinch of salt

  • 1 ½ cups fresh or frozen cherries, pitted and halved


Instructions

  1. Preheat oven to 180°C (350°F) and line a square baking pan with parchment paper.

  2. In a small bowl, mix ground flax with water and set aside for 5 minutes to thicken.

  3. In a large bowl, combine bran oats, buckwheat flour, baking powder, cinnamon, and salt.

  4. Add applesauce, erythritol, vanilla, and the flax mixture. Stir until the batter comes together.

  5. Fold in half of the cherries.

  6. Spread the mixture evenly into the prepared pan and press it down firmly.

  7. Scatter the remaining cherries on top, pressing them slightly into the surface.

  8. Bake for 25–30 minutes, until the edges are golden and the middle is set.

  9. Let cool completely before slicing.


Notes

  • If you prefer a stronger spice flavor, add nutmeg or cardamom.

  • Cherries can be swapped with berries or plums for variety. My version with berries looks like this: 


  • Store in the fridge in an airtight container for up to 5 days.
