For the brownie bites:
-
1 cup buckwheat flakes
-
1 cup oat flakes (use certified gluten-free if needed)
-
½ cup erythritol
-
3 tbsp unsweetened cocoa powder
-
1 tsp baking powder
-
A pinch of salt
-
¾ cup unsweetened plant milk (such as oat or almond)

2 tbsp melted coconut oil (or another neutral oil)

1 tsp vanilla extract

Optional: 2 tbsp dark chocolate chips for extra richness
For decoration:
-
Sugar-free, vegan, gluten-free cookies (for the wings)
-
Vegan decorating pen (for the eyes and small details, optionally: dark chocolate)
Instructions
Preheat the oven to 180°C (350°F). Line a muffin tray with silicone or paper liners.
-
Blend the flakes. Place buckwheat and oat flakes in a blender and pulse until you get a coarse flour.
-
Mix dry ingredients. In a large bowl, combine your blended flour, cocoa powder, erythritol, baking powder, and salt.

Add wet ingredients. Pour in plant milk, melted coconut oil, and vanilla extract. Stir until you get a smooth, thick batter. Add chocolate chips if using.
-
Fill muffin cups. Divide the batter evenly among 20 liners, filling each about ¾ full.
-
Bake for 20–25 minutes, or until firm outside but slightly soft inside. Let them cool completely before decorating.
-
Decorate as bats.
-
Cut cookies in half to create wings.
-
Insert two cookie halves on opposite sides of each muffin.
-
Use the decorating pen to make eyes (or chocolate) and any extra bat details.
-
-
Let the decoration sit for a few minutes before serving.
