Halloween Brownie Bat Muffins (Gluten-Free, Vegan)

These spooky Halloween muffins are soft, rich, and perfectly chocolatey; yet surprisingly healthy. Made with oats, buckwheat, and erythritol, they’re a wholesome treat turned into adorable bats with cookie wings and chocolatey eyes. Perfect for Halloween parties or cozy autumn evenings.

Ingredients

For the brownie bites:

  • 1 cup buckwheat flakes

  • 1 cup oat flakes (use certified gluten-free if needed)

  • ½ cup erythritol

  • 3 tbsp unsweetened cocoa powder

  • 1 tsp baking powder

  • A pinch of salt

  • ¾ cup unsweetened plant milk (such as oat or almond)

  • 2 tbsp melted coconut oil (or another neutral oil)

  • 1 tsp vanilla extract

  • Optional: 2 tbsp dark chocolate chips for extra richness

For decoration:

  • Sugar-free, vegan, gluten-free cookies (for the wings)

  • Vegan decorating pen (for the eyes and small details, optionally: dark chocolate)


Instructions

  1. Preheat the oven to 180°C (350°F). Line a muffin tray with silicone or paper liners.

  2. Blend the flakes. Place buckwheat and oat flakes in a blender and pulse until you get a coarse flour.

  3. Mix dry ingredients. In a large bowl, combine your blended flour, cocoa powder, erythritol, baking powder, and salt.

  4. Add wet ingredients. Pour in plant milk, melted coconut oil, and vanilla extract. Stir until you get a smooth, thick batter. Add chocolate chips if using.

  5. Fill muffin cups. Divide the batter evenly among 20 liners, filling each about ¾ full.

  6. Bake for 20–25 minutes, or until firm outside but slightly soft inside. Let them cool completely before decorating.

  7. Decorate as bats.

    • Cut cookies in half to create wings.

    • Insert two cookie halves on opposite sides of each muffin.

    • Use the decorating pen to make eyes  (or chocolate) and any extra bat details.

  8. Let the decoration sit for a few minutes before serving.


Notes

  • Store in the fridge for up to 5 days.

  • Add a teaspoon of espresso or extra cocoa for a richer chocolate flavor.

  • For a softer texture, use slightly more milk or a splash of applesauce.
