Mini Savory Vegan Croissants

These mini savory croissants are packed with protein, spices, and veggies. They're perfect as a snack, appetizer, or part of a festive spread. Crispy on the outside, soft and flavorful on the inside, they’re made completely plant-based and oil-free, so you can enjoy them guilt-free.

 Ingredients

  • 4 high-protein tortillas

  • 200 g vegan mince

  • 1 medium tomato, diced

  • 1 small red onion, finely chopped

  • 1 small red bell pepper, finely chopped

  • 1 garlic clove, minced

  • 1 tsp smoked paprika

  • ½ tsp chili flakes (or to taste)

  • ½ tsp ground cumin

  • Salt & pepper, to taste

  • A handful of fresh spinach or rocket leaves (optional)

  • Water or vegetable broth for sautéing

For topping (optional):

  • 1 tsp poppy seeds


Instructions

1. Prepare the filling

  • In a non-stick pan, sauté the onion with a splash of water or vegetable broth until translucent.

  • Add garlic and cook for 30 seconds.

  • Crumble the vegan mince into the pan, stir, and cook with smoked paprika, chili flakes, cumin, salt, and pepper for about 5 minutes.

  • Add diced tomato, finely chopped bell pepper, and spinach or rocket leaves, stir for 2 minutes until veggies are wilted and tender. Remove from heat.

2. Shape the mini croissants

  • Lay a tortilla flat and cut it into 2–3 long triangles, depending on desired size.

  • Place 1–2 tbsp of the filling at the wide base of each triangle.

  • Roll the triangle from the base to the tip, forming a mini croissant.

3. Bake

  • Place the croissants on a parchment-lined baking sheet.

  • Bake in a preheated oven at 180 °C (350 °F) for 10–12 minutes, until slightly crisp and golden at the edges. You can sprinkle them with poppy seeds before or after baking. 


4. Serve

  • Serve warm with sriracha or your favorite dip.


Notes

  • You can vary the veggies. Beans, zucchini, or mushrooms work really well.

  • To keep them oil-free, always use water or vegetable broth when sautéing.

  • Optional: brush the outside with plant milk for extra color and shine.

  • Adjust the spices according to your taste, for example, more chili for heat or paprika for smokiness.

  • Calories may vary depending on the type of tortilla, vegan mince, and veggies you use.
