Ingredients
Crust:

1 1/2 cups gluten-free oat flour

1/4 tsp salt

1/2 cup unsweetened applesauce

2–3 tbsp water (as needed to bind the dough)
Filling:
4 medium cucumbers, peeled and fully seeded

½–¾ cup erythritol (to taste)

1 ½ tsp cinnamon

¼ tsp nutmeg

¼ tsp ground cloves

1 tsp lemon juice
-
1 tsp vanilla extract

Pinch of salt
Topping:

½ - ¾ cup unsweetened apple mousse (100% apples, no added sugar)
Instructions
1. Preheat & prep crust
- Preheat the oven to 180°C (350°F).
- In a bowl, mix oat flour and salt. Add applesauce and stir until a soft dough forms. Add water gradually if needed.
- Press the dough evenly into a pie dish, shaping a rustic edge.
- Bake for 10–12 minutes, then remove from the oven and set aside.
2. Flavor the cucumbers
Peel, seed, and thinly slice the cucumbers. In a medium bowl, mix them with erythritol, cinnamon, nutmeg, lemon juice, and vanilla. Let the mixture sit for 10 minutes to combine flavors. The cucumbers will release a little moisture, which helps create a soft, juicy filling.
3. Assemble the pie
Spread the cucumber mixture evenly over the pre-baked crust.
4. Bake
- Bake at 180°C (350°F) for 30–35 minutes, until the top is set and slightly glossy.
- Let the pie cool completely.
5. Cool & decorate
- Carefully layer the apple mousse on top and smooth it gently with a spoon.
- Optional: dust the surface lightly with cinnamon or erythritol for a subtle finish.
