Cucumber "Apple" Pie – Vegan, Gluten-Free, Sugar-Free, and Oil-Free!

This cucumber "apple" pie is a playful twist on a classic dessert. The cucumbers magically mimic the tender sweetness of apples with a hint of spice and a touch of citrus.

Cucumber “Apple” Pie 




  • Prep time: 25 minutes

  • Baking time: 35–40 minutes

Ingredients

Crust:

  • 1 1/2 cups gluten-free oat flour

  • 1/4 tsp salt

  • 1/2 cup unsweetened applesauce

  • 2–3 tbsp water (as needed to bind the dough)

Filling:

  • 4 medium cucumbers, peeled and fully seeded

  • ½–¾ cup erythritol (to taste)

  • 1 ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ground cloves

  • 1 tsp lemon juice

  • 1 tsp vanilla extract

  • Pinch of salt

Topping:

  • ½ - ¾ cup unsweetened apple mousse (100% apples, no added sugar)



Instructions

1. Preheat & prep crust

  • Preheat the oven to 180°C (350°F).
  • In a bowl, mix oat flour and salt. Add applesauce and stir until a soft dough forms. Add water gradually if needed.
  • Press the dough evenly into a pie dish, shaping a rustic edge.
  • Bake for 10–12 minutes, then remove from the oven and set aside.

2. Flavor the cucumbers

Peel, seed, and thinly slice the cucumbers. In a medium bowl, mix them with erythritol, cinnamon, nutmeg, lemon juice, and vanilla. Let the mixture sit for 10 minutes to combine flavors. The cucumbers will release a little moisture, which helps create a soft, juicy filling.

3. Assemble the pie

Spread the cucumber mixture evenly over the pre-baked crust. 

4. Bake 

  • Bake at 180°C (350°F) for 30–35 minutes, until the top is set and slightly glossy.
  • Let the pie cool completely. 

5. Cool & decorate

  • Carefully layer the apple mousse on top and smooth it gently with a spoon.
  • Optional: dust the surface lightly with cinnamon or erythritol for a subtle finish.


Tips & Notes

  • Extra apple flavor: Apple extract or apple-flavored stevia would add a realistic apple taste without extra sugar!

  • Texture hack: If you like it firmer, squeeze the cucumbers lightly after slicing to remove excess water.
