4–6 tbsp water (adjust for texture)

Instructions
- Preheat the oven to 175°C / 350°F. Line a baking tray with parchment paper.
- In a bowl, whisk together chickpea flour, erythritol, salt, and spices.
- Add pumpkin purée and vanilla. Slowly add water, 1 tablespoon at a time, until the batter becomes smooth and glossy. The texture should resemble a very thick yogurt: spreadable, but not runny.
- Spoon about 1 tablespoon of batter onto the tray. Using the back of a spoon, spread it into a thin circle (about 8–9 cm in diameter). Leave space between cookies.
- Bake for 10–15 minutes, until the edges are lightly golden. The centers should still be flexible.
- Remove from the oven and work quickly. Flip one cookie, place a fortune in the center, fold in half, then gently curve over the edge of a cup or bowl to create the classic shape.
- Let them cool completely; they will firm up as they cool.
