Fortune cookies definitely have something magical in them, not because they forecast the future, but because they encourage us to pause, open, read, and contemplate for a while.

These pumpkin fortune cookies represent a more deliberate, mindful adaptation of the traditional variety. They are baked, not fried. Naturally gluten-free, plant-based, lightweight, and uncomplicated. Each one includes a brief message for the recipient, such as a reflection, a question, or a gentle reminder.

They're also ideal for parties, celebrations, or just as a tasty homemade treat 😊

🥠 Ingredients (makes ~20 - 24 cookies)

Batter

  • 1/2 cup chickpea flour

  • 1/3 cup pumpkin purée (plain, unsweetened)

  • 1/4 cup erythritol (powdered works best)

  • 1/4 tsp salt

  • 1/2 tsp cinnamon (optional)

  • 1/4 tsp vanilla extract (optional)

  • 4–6 tbsp water (adjust for texture)

Instructions

  1. Preheat the oven to 175°C / 350°F. Line a baking tray with parchment paper.
  2. In a bowl, whisk together chickpea flour, erythritol, salt, and spices.
  3. Add pumpkin purée and vanilla. Slowly add water, 1 tablespoon at a time, until the batter becomes smooth and glossy. The texture should resemble a very thick yogurt: spreadable, but not runny.
  4. Spoon about 1 tablespoon of batter onto the tray. Using the back of a spoon, spread it into a thin circle (about 8–9 cm in diameter). Leave space between cookies.
  5. Bake for 10–15 minutes, until the edges are lightly golden. The centers should still be flexible.
  6. Remove from the oven and work quickly. Flip one cookie, place a fortune in the center, fold in half, then gently curve over the edge of a cup or bowl to create the classic shape.

  7. Let them cool completely; they will firm up as they cool.
