Celeriac Fish Fingers (Vegan & Gluten-Free)
Some recipes come from wanting to eat something specific, while others come from wanting to know more. These celeriac fingers are in the middle; they look like something you know, but they taste quieter and more grounded.
Celeriac softens in an almost surprising way. It gets soft on the inside when you bake it, but it stays firm enough to hold a crisp coating. The edges of each piece turn golden, and there is a light contrast between the soft center and the outer layer.
A little bit of nori adds depth: subtle, slightly mineral, and savory. Not too strong, just enough to add to the flavor and give the coating a quiet depth.

Ingredients

1 big celeriac, peeled

½ cup chickpea flour

½ cup water

1 teaspoon garlic powder

½ teaspoon smoked paprika

¾ teaspoon salt

1 cup breadcrumbs (or finely ground oats)

2 tablespoons nutritional yeast

1 sheet nori, finely crumbled

½ teaspoon black pepper
Instructions

Preheat the oven to 200°C (400°F).

Cut the celeriac into small, even, finger-sized pieces (about 40-50, depending on how many fish fingers you want and in which size).

Bring a pot of water to a boil and cook the celeriac for 5–10 minutes, until just tender but still firm. Drain and let cool slightly.

In a bowl, whisk together chickpea flour, water, garlic powder, smoked paprika, and salt until smooth.

In another bowl, mix breadcrumbs, nutritional yeast, crumbled nori, and black pepper.

Dip each piece into the batter, then coat evenly in the breadcrumb mixture.

Place on a baking tray lined with parchment paper, leaving space between each piece.

Bake for 30–35 minutes, turning halfway through, until golden and crisp.

Let them cool for a few minutes before serving.

Cut them thinner for a more delicate, crisp result.

Add a little extra nori for a stronger savory depth.
