Easy Vegan Broccoli Tots

Ingredients

  • 2 cups broccoli florets
  • 1/2 cup oat flour
  • 1/2 cup cooked mashed potato
  • 1/3 cup nutritional yeast
  • 2 tbsp ground flaxseed
  • 3 tbsp water
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • salt, to taste
  • black pepper, to taste
  • 2 tbsp unsweetened plant milk

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Line a baking tray with baking paper.
  3. Mix ground flaxseed with water and let it sit for about 5 minutes to thicken.
  4. Steam or boil the broccoli until tender, around 10 minutes.
  5. Drain well and finely chop the broccoli.
  6. In a large bowl, combine broccoli, mashed potato, oat flour, nutritional yeast, flax mixture, garlic powder, smoked paprika, plant milk, salt, and pepper.
  7. Mix until a thick dough forms.
  8. Shape the mixture into small tots using your hands.
  9. Place them on the tray with a little space between each one.
  10. Bake for 30–35 minutes, flipping halfway through, until golden and slightly crisp.
  11. Let them cool for a few minutes before serving.

Notes & Variations

  • Cauliflower can replace part of the broccoli for a milder flavor.
  • Chickpea flour works well instead of oat flour for a firmer texture.
  • Add chili flakes or fresh herbs for extra depth.
  • For crispier tots, bake them a few extra minutes near the end.
