Orange Upside-Down Cake (Vegan & Gluten-Free)

Ingredients

Orange Layer

  • 2 medium oranges
  • 1/2 cup erythritol
  • 2 tbsp unsweetened plant milk

Cake Batter

  • 1 1/2 cups oat flour
  • 1/2 cup almond flour
  • 1/2 cup erythritol
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 cup unsweetened soy milk
  • 1/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • juice of 1/2 orange
  • zest of 1 orange

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Line a round cake pan with baking paper.
  3. Slice the oranges into thin rounds. Remove any seeds.
  4. In a small bowl, mix the erythritol with plant milk for the orange layer. Spread it across the bottom of the pan.
  5. Arrange the orange slices on top in a single layer.
  6. In a large bowl, whisk together oat flour, almond flour, erythritol, baking powder, baking soda, and salt.
  7. Add soy milk, applesauce, vanilla, orange juice, and orange zest. Stir until smooth.
  8. Pour the batter gently over the oranges and smooth the top.
  9. Bake for 40–45 minutes, until golden and firm in the center.
  10. Let the cake cool for about 15 minutes before carefully flipping it onto a plate.
  11. Allow it to cool slightly before slicing so the orange layer can settle properly.

Notes & Variations

  • Almond flour gives the cake a softer texture, but sunflower seed flour also works well.
  • For a deeper citrus flavor, add a little lemon zest to the batter.
  • Blood oranges make an especially beautiful version in winter.
  • If you prefer a moister cake, add 2–3 tablespoons extra applesauce.
