Vegan Baked Mini-Burritos

Warm, crispy little burritos like these are perfect when you want something savory, filling, and easy to share. Cutting each tortilla into four smaller pieces makes them feel more snack-like, almost like baked taquitos, while still keeping that soft burrito center.

The vegan mince becomes rich and smoky with tomato sauce and taco spices, and the protein tortillas hold everything together surprisingly well after baking. They crisp up around the edges while staying soft inside.

These are especially good fresh from the oven with salsa, yoghurt, tomato sauce, or avocado on the side.

Ingredients

  • 4 protein tortillas
  • 200 g vegan mince
  • 2–3 tbsp taco seasoning
  • 3/4 cup tomato sauce
  • 1/2 avocado, sliced
  • A few peppers
  • salt and black pepper, to taste

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Line a baking tray with parchment paper.
  3. Heat a non-stick skillet over medium heat.
  4. Add the vegan mince and cook for 5 minutes, breaking it apart as it cooks.
  5. Stir in taco seasoning, diced peppers, and tomato sauce. Cook for another 5 minutes until the mixture is thick and flavorful.
  6. Remove from the heat and let the filling cool slightly.
  7. Cut each keto tortilla into 3 equal sections.
  8. Place a small spoonful of the mince mixture onto each piece. Add a small slice of avocado.
  9. Fold the sides inward and roll tightly into mini burritos.
  10. Arrange the burritos seam-side down on the prepared baking tray.
  11. Bake for 15–20 minutes until lightly golden and crisp around the edges.
  12. Allow to cool for around 2 minutes before serving.
  13. Serve warm with salsa, tomato sauce, or your other favorite dip. 

Notes & Variations

  • Lidl keto protein tortillas work especially well because they stay flexible while baking. Similar tortillas can sometimes be found in Carrefour, Kaufland, Auchan, or larger health food sections.
  • For crispier burritos, lightly brush the tops with plant milk before baking.
  • Jalapeños or smoked paprika add extra heat and depth.
  • You can air-fry them for an even crisper texture.
