Vegan Sausage Rolls

Ingredients
- 2 high-protein tortillas
- 1 1/2 cups vegan ground meat
- 1/2 cup onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp tomato paste
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- pinch of salt
- 2 tbsp plant-based milk
- 1 tbsp mustard (optional)
- 2 tbsp nutritional yeast (optional, for depth)
- sesame seeds (for topping)
Instructions
- Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
- In a pan, cook the onion and garlic with a splash of water until soft.
- Add vegan ground meat, tomato paste, paprika, thyme, salt, and pepper. Cook for 5–7 minutes until everything is well combined and slightly browned.
- Stir in nutritional yeast and mustard if using. Let the filling cool slightly.
- Lay out a tortilla and place a portion of filling along one edge.
- Roll tightly into a log shape and place seam-side down on the tray.
- Lightly score the tops with a knife and brush with plant-based milk.
- Sprinkle sesame seeds over each roll.
- Bake for 25–30 minutes until golden and slightly crisp on top.
- Let them cool for a few minutes before serving.
Notes / Variations
- For extra protein, you can mix in mashed lentils with the filling.
- If you want a softer texture, don’t overbake.
- Add a bit of chili or cumin for a deeper, warmer flavor.
- You can slice them into smaller pieces for snack-style portions.
