Licorice Oat Cookies (Vegan & Gluten-Free)

Ingredients
- 1½ cups rolled oats
- ½ cup erythritol
- 1 tbsp ground flaxseed
- 3 tbsp water
- 1 tbsp licorice powder (or finely grated licorice root)
- ½ tsp baking powder
- ¼ tsp salt
- ⅓ cup unsweetened plant milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper.
- Mix the flaxseed and water in a small bowl. Let it sit for 5 minutes to thicken.
- Place 1 cup of the oats in a blender and pulse a few times until a coarse flour forms. Leave the remaining ½ cup of oats whole.
- In a large bowl, combine the blended oats, whole oats, erythritol, licorice powder, baking powder, and salt.
- Add the flax egg, plant milk, and vanilla extract. Stir until a thick dough forms.
- Let the dough rest for 5 minutes so the oats can absorb some moisture.
- Shape into 12 cookies and place them on the prepared baking tray. Flatten slightly with your hand.
- Bake for 15 minutes until lightly golden around the edges.
- Allow the cookies to cool completely before serving. They will firm up as they cool.
Notes & Variations
- Add 1 tsp cinnamon for extra warmth.
- A tablespoon of chopped walnuts adds crunch.
- For softer cookies, stir in 2 tbsp unsweetened applesauce.
- For a stronger licorice flavor, add an extra teaspoon of licorice powder.
