Licorice Oat Cookies (Vegan & Gluten-Free)

Ingredients

  • 1½ cups rolled oats
  • ½ cup erythritol
  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1 tbsp licorice powder (or finely grated licorice root)
  • ½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup unsweetened plant milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper.
  2. Mix the flaxseed and water in a small bowl. Let it sit for 5 minutes to thicken.
  3. Place 1 cup of the oats in a blender and pulse a few times until a coarse flour forms. Leave the remaining ½ cup of oats whole.
  4. In a large bowl, combine the blended oats, whole oats, erythritol, licorice powder, baking powder, and salt.
  5. Add the flax egg, plant milk, and vanilla extract. Stir until a thick dough forms.
  6. Let the dough rest for 5 minutes so the oats can absorb some moisture.
  7. Shape into 12 cookies and place them on the prepared baking tray. Flatten slightly with your hand.
  8. Bake for 15 minutes until lightly golden around the edges.
  9. Allow the cookies to cool completely before serving. They will firm up as they cool.

Notes & Variations

  • Add 1 tsp cinnamon for extra warmth.
  • A tablespoon of chopped walnuts adds crunch.
  • For softer cookies, stir in 2 tbsp unsweetened applesauce.
  • For a stronger licorice flavor, add an extra teaspoon of licorice powder.
