Vegan Pineapple Ham-Style Roast

This version is inspired by the classic pineapple-and-ham platter but made entirely from plants. The roast is tender, sliceable, and full of flavor, while the pineapple creates a naturally glossy, golden base.

Ingredients
For the roast
- 300 g firm tofu
- 1/2 cup chickpea flour
- 1/4 cup rice flour
- 1/4 cup quinoa flour
- 2 tbsp nutritional yeast
- 1 tbsp tomato paste
- 1 tbsp tamari
- 1 tsp smoked paprika
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 3 tbsp almond milk
For the pineapple base
- 6 to 8 pineapple rings
- 2 tbsp pineapple juice
- 1 tbsp tamari
- 1 tbsp erythritol
- 1/2 tsp smoked paprika
For the decoration (optional)
10–15 whole cloves
Instructions
- Preheat the oven to 180°C (355°F).
- Place the pineapple rings in the bottom of a baking dish so they form an even layer covering most of the surface.
- In a small bowl, mix pineapple juice, tamari, erythritol, and smoked paprika. Pour evenly over the pineapple.
- Blend the tofu until completely smooth.
- In a large bowl, combine blended tofu, chickpea flour, rice flour, quinoa flour, nutritional yeast, tomato paste, tamari, smoked paprika, pepper, salt, and almond milk.
- Mix and knead gently for a few minutes until a thick, cohesive dough forms. Add a little extra almond milk if the mixture feels too dry.
- Shape into an oval roast and place directly on top of the pineapple layer.
- Optional: Score the top in a diamond pattern and gently press whole cloves into the intersections.
- Bake for around an hour, until the surface becomes lightly golden.
- Let the roast rest for 10–15 minutes before slicing.
Notes & Variations
- A little mustard in the roast mixture adds depth and a subtle tang.
- For a sweeter finish, brush the top with pineapple juice during the last 10 minutes of baking.
- Smoked paprika gives the roast its traditional ham-inspired flavor.
- Leftovers slice beautifully for sandwiches the next day.
