Tofu Pretzels (Gluten-Free & Vegan)

Pretzels have a way of bringing a little comfort into an ordinary day. Their golden shape, warm center, and slightly chewy texture make them feel like something special, even when they are made with simple ingredients at home.

This version uses tofu to create a soft, tender dough without eggs or dairy. It gives the pretzels a delicate texture while adding a little more nourishment compared to a classic bakery-style snack.

Made with a gluten-free flour blend and ground flaxseed, these pretzels are easy to shape and perfect for sharing. Enjoy them warm with mustard, a creamy dip, hummus, or your favorite savory spread.


Vegan Tofu Soft Pretzels

Ingredients

Pretzel Dough

  • 250 g firm tofu, drained
  • 180–220 g gluten-free flour blend
  • 2 tbsp ground flaxseed
  • 1 tbsp baking powder
  • 1–2 tbsp erythritol or sugar-free sweetener
  • ½ tsp salt
  • 1–3 tbsp unsweetened plant-based milk, only if needed

For the best texture, use a 1:1 gluten-free baking flour blend containing rice flour, potato starch, tapioca starch, and xanthan gum. If your blend does not contain xanthan gum, add 1 tsp separately.

Baking Soda Bath

  • 1 liter water
  • 3 tbsp baking soda

Topping

  • coarse salt
  • sesame seeds or poppy seeds
  • optional: garlic powder, dried herbs, or nutritional yeast

Instructions

1. Prepare the dough

  1. Preheat the oven to 200°C (400°F).
  2. Line a baking tray with parchment paper.
  3. Blend the tofu until completely smooth.
  4. In a large bowl, combine gluten-free flour, ground flaxseed, baking powder, erythritol, and salt.
  5. Add the blended tofu and mix until a soft dough forms.
  6. Add plant-based milk, 1 tablespoon at a time, if the dough feels too dry.
  7. If the dough is too sticky, add a little more flour.

The dough should feel soft and flexible, but it should not stick heavily to your hands.


2. Shape the pretzels

  1. Divide the dough into 6 equal pieces.
  2. Roll each piece into a long rope.
  3. Shape each rope into a pretzel:
    • Create a U-shape.
    • Cross the ends over each other.
    • Fold the ends down and gently press them into the bottom part of the pretzel.
  4. Place the shaped pretzels on the prepared baking tray.

If the dough cracks, gently press it back together with slightly damp fingers.


3. Prepare the baking soda bath

  1. Bring 1 liter of water to a gentle boil.
  2. Carefully add the baking soda.
  3. Reduce the heat slightly.
  4. Place each pretzel into the water for 20–30 seconds.
  5. Remove with a slotted spoon and place back onto the baking tray.

This step helps create the classic pretzel texture with a slightly chewy outside and deeper golden color.


4. Add toppings and bake

  1. Sprinkle the pretzels with coarse salt, seeds, or your chosen toppings.
  2. Bake for 15–20 minutes, until firm and lightly golden.
  3. Let them cool for 10 minutes before serving.

Notes / Variations

  • A 1:1 gluten-free flour blend works best because the combination of flours and starches helps create a flexible dough.
  • Avoid using only almond flour, coconut flour, or oat flour because the pretzels may not hold their shape.
  • Firm tofu gives the dough better structure than silken tofu.
  • If your tofu contains a lot of moisture, press it for 10–15 minutes before blending.
  • For a savory version, add garlic powder, dried rosemary, or nutritional yeast directly into the dough.
  • These pretzels taste best fresh, but they can be gently reheated in the oven before serving.
