Vegan Pigs-In-A-Blanket

These vegan pigs-in-a-blanket are warm, savory, and crisp around the edges but much lighter than the classic version. Instead of puff pastry, high-protein tortillas wrap around vegan sausages to create a simple, satisfying snack or meal-prep option.

They’re quick to make, easy to portion, and perfect with mustard, ketchup, or a creamy dipping sauce. Baking them keeps the outside golden without needing extra oil, while the tortilla gives each bite a soft-crisp texture that feels comforting and satisfying.

Ingredients

  • 2 high-protein tortillas
  • 4 vegan sausages, cut in half
  • 1 tablespoon unsweetened almond milk, for brushing
  • 1 teaspoon Dijon mustard or yellow mustard
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried chives
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: sesame seeds or poppy seeds for topping

Optional dipping sauce:

  • mustard
  • ketchup
  • plant-based yogurt mixed with lemon juice and chives

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking tray with baking paper.
  2. Cut each vegan sausage in half to create 8 smaller pieces.
  3. Cut each tortilla into 4 triangles or strips, depending on the size and shape of your tortillas.
  4. Spread a thin layer of mustard onto each tortilla piece.
  5. Place one sausage piece at the wider end of each tortilla strip and roll it tightly.
  6. Place each roll seam-side down on the prepared baking tray.
  7. Brush the tops lightly with almond milk, then sprinkle with smoked paprika, dried chives, salt, pepper, and optional sesame or poppy seeds.
  8. Bake for 10–15 minutes, until the tortillas are lightly golden and crisp around the edges.
  9. Let them cool for 3–5 minutes before serving.

Notes & Variations

  • For a version that works better for sensitive digestion, choose vegan sausages without onion, garlic, inulin, or other ingredients that may be difficult to tolerate.
  • If your tortillas are large, make smaller bite-sized rolls by cutting each sausage into thirds instead of halves.
  • For extra crispiness, prepare them in an air fryer at 190°C (375°F) for 5-10 minutes.
  • Add a thin slice of plant-based cheese before rolling for a richer, more indulgent version.
  • These are best served fresh, but they can be reheated in the oven or air fryer to bring back their crisp texture.
