Ingredients

Fruit Filling

  • 500 g fresh pineapple, diced
  • 3 kiwis, peeled and sliced
  • 2–3 passion fruits, pulp only
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 4–5 tbsp erythritol, adjust to taste
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch or tapioca starch

Oat Coconut Topping

  • 90 g rolled oats
  • 1/2 cup of coconut flour
  • 2–3 tbsp erythritol
  • ½ tsp cinnamon
  • Pinch of salt
  • 90–110 g unsweetened applesauce
  • 1–3 tbsp unsweetened plant-based milk, only if needed

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Add the pineapple, kiwi, and passion fruit pulp to a medium baking dish.

  3. Add the lime juice, lime zest, erythritol, vanilla extract, and cornstarch. Stir gently until the fruit is evenly coated.

  4. In a separate bowl, combine the rolled oats, coconut flour, erythritol, cinnamon, and salt.

  5. Add the applesauce and mix until the oats are coated and small crumbs start to form.

  6. Let the topping sit for 5 minutes so the coconut flour can absorb moisture.

  7. If the topping feels too dry, add plant-based milk 1 tablespoon at a time. It should be crumbly and slightly sticky, not wet.

  8. Sprinkle the oat topping evenly over the fruit filling.

  9. Bake for 30–35 minutes, until the fruit is bubbling and the topping is lightly golden.

  10. Let the crisp cool for 10 minutes before serving so the fruit layer can thicken slightly.


Notes & Variations

  • Use ripe pineapple for the sweetest flavor.
  • Add an extra tablespoon of erythritol if your kiwi or passion fruit tastes very tart.
  • For a more golden topping, bake for the full 35 minutes.
  • If the topping browns too quickly, loosely cover the dish with foil.
  • Serve warm with unsweetened dairy-free yogurt or vanilla soy yogurt.
  • Store leftovers in the fridge for up to 3 days.
