Vegan Baked Christmas "Fish" (from Tofu)
Ingredients:
- 1 block of firm tofu (pressed to remove excess water)
- 1 cup unsweetened soy milk (or another plant-based milk)
- 2 tbsp nutritional yeast flakes
- 1 tbsp lemon juice
- 1 tbsp tamari or gluten-free soy sauce
- 1 tsp fresh dill, chopped (or 1 tsp dried)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp rice flour
- Salt and pepper to taste
- 1 sheet of nori
- Fresh lamb's lettuce (for decorating)
- Sliced lemon (for garnish)
Instructions:
Preheat your oven to 375°F (190°C).
Prepare the tofu: Slice the tofu block into thick pieces, about 1 inch each. Arrange them on a baking tray lined with parchment paper.
Make the marinade: In a bowl, whisk together the soy milk, nutritional yeast, lemon juice, tamari, dill, garlic powder, onion powder, rice flour, salt, and pepper until smooth.
Coat the tofu: Pour the marinade over the tofu pieces, ensuring each piece is fully covered. Let the tofu sit for 10-15 minutes to absorb the flavors.
Wrap the tofu in nori: Cut the nori sheet into ½-inch strips. Starting at one end, center each strip and tightly wrap it around the tofu, pressing gently so it sticks. Place the tofu on a plate, seam-side down— the moisture released from the tofu will help the nori adhere. Repeat this step for the remaining pieces.
Bake the tofu: Place the tofu on a baking tray and bake for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy on the edges.
Garnish and serve: Once baked, remove the tofu from the oven. Decorate the plate with fresh lamb's lettuce and garnish with sliced lemon for a festive touch.
