Vegan Baked Christmas "Fish" (from Tofu)

Ingredients:

  • 1 block of firm tofu (pressed to remove excess water)
  • 1 cup unsweetened soy milk (or another plant-based milk)
  • 2 tbsp nutritional yeast flakes
  • 1 tbsp lemon juice
  • 1 tbsp tamari or gluten-free soy sauce
  • 1 tsp fresh dill, chopped (or 1 tsp dried)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp rice flour
  • Salt and pepper to taste
  • 1 sheet of nori
  • Fresh lamb's lettuce (for decorating)
  • Sliced lemon (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Prepare the tofu: Slice the tofu block into thick pieces, about 1 inch each. Arrange them on a baking tray lined with parchment paper.

  3. Make the marinade: In a bowl, whisk together the soy milk, nutritional yeast, lemon juice, tamari, dill, garlic powder, onion powder, rice flour, salt, and pepper until smooth.

  4. Coat the tofu: Pour the marinade over the tofu pieces, ensuring each piece is fully covered. Let the tofu sit for 10-15 minutes to absorb the flavors.

  5. Wrap the tofu in nori: Cut the nori sheet into ½-inch strips. Starting at one end, center each strip and tightly wrap it around the tofu, pressing gently so it sticks. Place the tofu on a plate, seam-side down— the moisture released from the tofu will help the nori adhere. Repeat this step for the remaining pieces.

  6. Bake the tofu: Place the tofu on a baking tray and bake for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy on the edges.

  7. Garnish and serve: Once baked, remove the tofu from the oven. Decorate the plate with fresh lamb's lettuce and garnish with sliced lemon for a festive touch.

  8. Serve and enjoy! Serve the baked tofu as a main dish or alongside your favorite holiday sides.

This vegan baked "fish" is a perfect holiday dish that is both light and comforting. It’s great for gatherings, and you can easily adapt it with different herbs and spices to suit your personal taste.
