Ingredients

- ¾ cup (90g) hemp flour
- 2 tbsp ground flaxseed + 6 tbsp water (flax egg)
- 2 tbsp nutritional yeast
- ½ tsp smoked paprika
- ½ tsp ground cumin
- 1 tsp dried oregano or za'atar (optional)
- Salt and pepper to taste
For the Dip:
- ½ cup (120g) coconut yogurt
- 1 tsp lemon juice
- ½ tsp smoked paprika
- Fresh dill for garnish
Optional Serving:
- Fresh salad leaves
Instructions
Prepare the Zucchini:
- Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much water as possible to prevent the fritters from being soggy.
Make the Flax Egg:
- In a small bowl, mix the ground flaxseed with water and let it sit for 5–10 minutes until it becomes gelatinous.
Mix the Ingredients:
- In a large bowl, combine the grated zucchini, hemp flour, flax egg, nutritional yeast, smoked paprika, cumin, oregano, salt, and pepper. Mix until a dough-like consistency forms.
Shape and Bake:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Scoop small portions of the mixture and flatten them into patties on the baking sheet.
- Bake for 20 minutes, flip, and bake for another 10–15 minutes until golden and crispy.
Prepare the Dip:
- In a small bowl, mix the coconut yogurt with lemon juice, smoked paprika, and a pinch of salt. Garnish with fresh dill.
Serve and Enjoy:
- Arrange the fritters on a plate with salad leaves, and serve with the dip on the side.
