Vegan Gingerbread Cookies
Ingredients:
For the cookies:
2 cups buckwheat flour
1/3 cup erythritol (or adjust to taste)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
1 tbsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
1/3 cup unsweetened applesauce
1/4 cup plant-based milk (e.g., almond or oat)
1 tsp vanilla extract
For decorating:
Coconut vanilla yogurt
Edible pens
Almond flakes or crushed walnuts
Instructions:
Prepare the dough: In a large mixing bowl, combine the buckwheat flour, erythritol, baking powder, baking soda, salt, and spices (ginger, cinnamon, nutmeg, cloves). Stir well.
Add the applesauce, plant-based milk, and vanilla extract. Mix until a firm dough forms. If the dough is too dry, add a splash of plant-based milk; if too sticky, add a little more buckwheat flour.
Chill the dough: Wrap the dough in parchment paper and refrigerate for at least 30 minutes to make it easier to handle.
Roll and cut: Preheat your oven to 350°F (175°C). Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. Use festive cookie cutters to cut out shapes like stars, snowmen, and hearts.
Bake: Place the cookies on a parchment-lined baking sheet and bake for 8-10 minutes, or until the edges are firm. Let them cool completely on a wire rack before decorating.
Decorate: Use coconut vanilla yogurt as a frosting base. Draw details with edible pens or sprinkle almond flakes and walnuts for added texture. Get creative with patterns and designs – the more imaginative, the better!
