Layered Vegan Holiday Pâté – A Showstopper Christmas Treat
Christmas is the season for sharing beautiful and delicious dishes, and this three-layered vegan pâté is sure to be the centerpiece of your holiday table! With its vibrant layers of tomatoes, creamy tofu “ricotta,” and rich spinach, this pâté is as eye-catching as it is flavorful. Inspired by Tallulah’s Treats, I’ve adapted it to include my personal touch.
This festive pâté is gluten-free, and oil-free, making it a healthier option that doesn’t skimp on taste or holiday flair. Whether you serve it with crackers, fresh veggies, or on its own, it’s guaranteed to be a conversation starter!
Festive Vegan Pâté
Ingredients
For the tomato layer:1 cup canned tomatoes (strained and blended, no added sugar)
½ cup oat flour
½ cup walnuts, soaked for 2-3 hours and drained
1 tbsp nutritional yeast
½ tsp smoked paprika
½ tsp ground cumin
Salt and pepper, to taste
For the tofu layer (middle):
1 cup firm tofu (crumbled)
1 tbsp lemon juice
1 tbsp nutritional yeast
½ tsp garlic-infused olive oil (optional)
¼ tsp salt
For the spinach layer (top):
2 cups fresh spinach leaves (lightly steamed)
1 tbsp hemp flour (for thickening)
1 tbsp nutritional yeast
½ tsp salt
Optional garnish:
Sprouts, nori strips, or sesame seeds
Instructions
Prepare the tomato layer:In a food processor, blend the strained tomatoes, oat flour, soaked walnuts, nutritional yeast, smoked paprika, cumin, salt, and pepper until smooth. Set aside.
Make the tofu layer:
Crumble the firm tofu into a mixing bowl. Add lemon juice, nutritional yeast, and salt. Mix well with a fork until it resembles ricotta cheese. Adjust seasoning if needed.
Create the spinach layer:
In a food processor, combine steamed spinach, hemp flour, nutritional yeast, and salt. Blend until smooth and thickened.
Assemble the pâté:
Line a loaf pan with parchment paper. Spread the tomato layer evenly at the bottom, followed by the tofu layer, and finally the spinach layer on top. Smooth each layer with a spatula.
Chill and set:
Cover and refrigerate the pâté for at least 4 hours or overnight to allow the layers to firm up.
Serve:
Carefully remove the pâté from the loaf pan and place it on a serving plate. Garnish with sprouts, nori strips, or sesame seeds for a festive touch. Serve with gluten-free crackers or fresh veggies.
