High-Protein Seitan Bread

 Bread made from seitan? It might sound unusual, but this high-protein, chewy, and satisfying loaf is a game-changer! Unlike traditional bread, which relies on flour and yeast, this version is based on vital wheat gluten, creating a dense, hearty texture that’s perfect for savory toppings.

I topped mine with BBQ sauce and fresh basil, but a teriyaki glaze, hummus, or even mashed avocado would be just as delicious. It’s ideal for slicing and serving as a snack, alongside a salad, or as a unique sandwich base. If you love chewy bread with a deep umami flavor, this one’s worth trying!


Seitan Bread with BBQ Glaze



Ingredients:

  • 1 cup vital wheat gluten

  • 1/4 cup chickpea flour

  • 1 tbsp nutritional yeast

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 cup water or vegetable broth

  • 1 tbsp tamari or soy sauce

  • 1/2 tsp apple cider vinegar

Toppings

  • BBQ sauce (or teriyaki sauce)

  • Fresh basil, for garnish

Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix dry ingredients: wheat gluten, chickpea flour, nutritional yeast, and seasonings.

  3. In another bowl, whisk together wet ingredients: water/broth, tamari, and vinegar.

  4. Combine wet and dry ingredients, stirring until a dough forms. Knead for 2-3 minutes.

  5. Shape into a loaf and place on a lined baking sheet.

  6. Bake for 25-30 minutes, until firm.

  7. Brush with BBQ sauce (or teriyaki sauce) while warm and top with fresh basil.

  8. Slice & enjoy!
