High-Protein Seitan Bread
Bread made from seitan? It might sound unusual, but this high-protein, chewy, and satisfying loaf is a game-changer! Unlike traditional bread, which relies on flour and yeast, this version is based on vital wheat gluten, creating a dense, hearty texture that’s perfect for savory toppings.

Seitan Bread with BBQ Glaze
Ingredients:

1 cup vital wheat gluten

1/4 cup chickpea flour

1 tbsp nutritional yeast

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp salt

1/2 cup water or vegetable broth

1 tbsp tamari or soy sauce

1/2 tsp apple cider vinegar

Instructions:

Preheat the oven to 180°C (350°F).

In a bowl, mix dry ingredients: wheat gluten, chickpea flour, nutritional yeast, and seasonings.

In another bowl, whisk together wet ingredients: water/broth, tamari, and vinegar.

Combine wet and dry ingredients, stirring until a dough forms. Knead for 2-3 minutes.

Shape into a loaf and place on a lined baking sheet.
