Zesty Lime & Pistachio Cheesecake

 There’s something irresistibly fresh about a citrusy dessert. The zing of lime paired with a creamy, smooth filling and a slightly crunchy crust makes this cheesecake light yet satisfying. The subtle nuttiness adds depth, making every bite a perfect balance of flavors.

For an extra touch, I tried two versions: simple with a lime zest and a pure matcha dusting, and another with dollops of yogurt for added contrast and freshness. Both turned out beautifully—so it’s up to you to choose your favorite way to serve it!

Lime & Pistachio Cheesecake


Ingredients:

For the crust:

  • 1 cup oats
  • ½ cup buckwheat groats
  • 3 tbsp erythritol
  • 2 tbsp water (adjust as needed)

For the filling:

  • 1 block firm tofu (pressed)
  • Juice and zest of 1 lime
  • ½ tsp xanthan gum
  • A handful of chopped pistachios
  • 2 tbsp erythritol
  • 3 tbsp plant milk

For topping:

  • Extra lime zest
  • Matcha powder (for dusting)
  • Optional: Dollops of coconut yogurt

Instructions:

  1. Prepare the crust:

    • Blend oats and buckwheat into a fine texture.
    • Mix with erythritol and add water gradually until the mixture holds together.
    • Press into a lined springform pan and bake at 180°C (350°F) for 10–12 minutes.
  2. Make the filling:

    • Blend tofu, lime juice, zest, erythritol, and plant milk until smooth.
    • Sprinkle in xanthan gum and blend again to thicken.
    • Stir in the chopped pistachios for extra texture.
  3. Assemble & chill:

    • Pour the filling over the crust and smooth the top.
    • Refrigerate for at least 3 hours (or overnight) to firm up.
  4. Decorate & serve:

    • Dust the top with matcha.


      If using yogurt, add small dollops around the surface.

      Garnish with lime slices if desired.
