Goji Berries Walnut Fudge

Inspired by creative fudge recipes, I wanted to create something with a unique twist. Instead of traditional chocolate or sugar-heavy ingredients, this fudge combines wholesome oat bran and buckwheat flakes for a chewy, satisfying base. 

To keep things simple and clean, I replaced fats with unsweetened soy milk to maintain creaminess without oil. The sweetener I use is erythritol, which keeps the fudge sugar-free but still sweet enough to enjoy guilt-free.

Goji Berries Walnut Fudge



Ingredients:

  • 1 cup oat bran

  • 1/2 cup buckwheat flakes

  • 1/3 cup smooth tomato paste (thick, no added sugar)

  • 1/4 cup walnuts, roughly chopped

  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mixed and rested for 5–10 min)

  • 1/2 cup erythritol (adjust sweetness to taste)

  • A handful of goji berries

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/4 to 1/3 cup unsweetened soy milk (or other plant milk)


Instructions:

  1. Preheat your oven to 175°C (350°F) and line a small baking dish or loaf pan with parchment paper.

  2. Prepare the flax egg: Mix 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl. Let it sit for 5–10 minutes until gel-like.

  3. In a large bowl, mix together oat bran, buckwheat flakes, protein powder, erythritol, cinnamon, ginger, nutmeg, and salt.

  4. Add the tomato paste, vanilla extract, and the flax egg, stirring to combine.

  5. Slowly add soy milk, a little at a time, mixing well until the mixture forms a thick, fudge-like consistency. You want it moist but firm enough to press.

  6. Fold in the chopped walnuts and goji berries.

  7. Spoon the mixture into the prepared baking dish. Press it down firmly and smooth the top with a spatula or spoon.

  8. Bake for 20–25 minutes, or until the edges are firm and the center feels set when touched.

  9. Let it cool in the pan for 10–15 minutes, then transfer to a rack to cool completely before slicing into squares. You can decorate it with your favorite topping or leave it without any decorations.


  10. Store in an airtight container in the fridge for up to 5 days.
