  • 1 cup (240ml) unsweetened almond milk
  • 1 tbsp apple cider vinegar
  • ¼ cup (60ml) unsweetened applesauce
  • 1 tbsp pure vanilla extract

Instructions:

  1. Preheat and Prep:
    Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. Mix Dry Ingredients:
    Whisk together the gluten-free flour, erythritol, baking powder, baking soda, and salt in a large bowl.

  3. Create Vegan Buttermilk:
    In a small bowl, mix the almond milk and apple cider vinegar. Let sit for 5 minutes to curdle slightly.

  4. Combine Wet Ingredients:
    Add the applesauce and vanilla extract to the buttermilk, then stir.

  5. Mix the Batter:
    Gradually pour the wet mixture into the dry ingredients, mixing gently until just combined. Avoid overmixing to keep the cupcakes light and fluffy.

  6. Bake:
