Stuffed Black Turnips with Oats and Vegan Meat





Ingredients for Stuffed Turnips:

  • 4 medium black turnips
  • 1/2 cup rolled oats
  • 1/2 cup vegan ground meat
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt (or to taste)
  • 1/4 cup vegetable broth (for moisture)
  • 2 tbsp chopped fresh parsley (optional for garnish)

Optional Sauces for Topping:

  • Homemade Hummus Sauce (recipe below)
  • Tomato sauce

For the Homemade Hummus Sauce:

  • 1/2 cup cooked chickpeas (or canned, rinsed and drained)
  • 2 tbsp water (adjust for consistency)
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika (optional for extra flavor)
  • 1/4 tsp salt (or to taste)

Instructions for Hummus Sauce:

  1. Add the chickpeas, water, lemon juice, cumin, paprika, and salt to a blender or food processor.
  2. Blend until smooth and creamy, adding more water if needed to reach your desired consistency.
  3. Adjust seasoning to taste. Set aside for drizzling.

Instructions for Stuffed Turnips:

  1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Wash and peel the black turnips. Slice off the tops and carefully hollow out the centers using a spoon or melon baller, leaving a sturdy shell. Save the scooped-out flesh for the filling.
  3. In a bowl, mix the rolled oats, vegan ground meat, smoked paprika, thyme, black pepper, and salt. Finely chop the reserved turnip flesh and mix it into the filling. Add vegetable broth to bind everything together.
  4. Stuff each turnip generously with the oat and vegan meat mixture. Pack the filling tightly but avoid overstuffing.
  5. Place the stuffed turnips in the baking dish. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the turnips are tender and the tops are golden.



  6. Optional: Drizzle with hummus sauce or a touch of tomato sauce for added flavor and visual appeal. Sprinkle with fresh parsley if desired.
